Honey Carrot, Feta and Lentil Salad
This was a really straight forward and light meal, the small carrots that I had were full of flavour and roasted really easily- they are so different from the huge things I’m used to from the super market! Lettuce and salad leaves and one of those things that it must be possible to grow locally but even in the shops it seems to come mostly from Jersey?! To be honest, it must be possible to grow at home so I should just look into that really.
Cheese is something else I’m going to look into because Guernsey has produced some award winning cheeses and our dairy definitely produces cheddar so watch this space…

This sounds delicious! I made the Good Food version a few weeks ago and it was great, but I bet your version with small, fresh carrots was even better!
The small carrots taste so good… really carroty!!!!
