Three Bean Chilli

So chillies I got and chillies I used! Made a big batch of ‘3 bean chilli!’ Good warming food for this kind of weather! Easily adaptable, and based on a Jamie Oliver recipe, this is what I did… Friendly for vegans also 🙂

Serves 5

Olive Oil
1 onion chopped
2 cloves garlic sliced
1 red pepper chopped
1 tsp cinnamon
1 tsp cumin
2 chillies (I used 1 orange and 1 red) finely chopped- take the seeds out if you don’t want it too hot
2 tinned toms
1 tin of black eye beans
1 tin kidney beans
1 tin cannelloni beans

To serve:

Rice
Cheese (if you aren’t vegan!!)

Heat around two table spoons of olive oil in a large pan on a medium/high heat.

Fry the onions, garlic and pepper for about 5 mins.

Add the chilli and spices and cook, stirring frequently for another 7 mins.

Meanwhile drain and rinse the beans.

Add the beans and tomatoes and stir well.

Bring to the boil and then reduce heat and allow to simmer for 30mins.

Serve with rice and top with chopped coriander or grated cheese.
