I didn’t fry all of the polenta last night and so it had to be incorporated into to tea! Today it acted as a meat substitute in a simple stir fry and it did so quite successfully, I cooked it just the same as yesterday (deep fried 4 mins) and threw it in at the end of the stir fry just before adding the sauce (in our case sweet chilli) and coriander. It did quite a good job of mimicking that very soft battered chicken you get on the street market stalls in somewhere like Camden market, so if tofu isn’t your thing maybe try this! (yes possibly not quite as healthy but tasty!)
